Just wondering if anyone ever tried making cheese at home…I am thinking of doing that and adding some spice flavour to the cheese…

Why make it when you can buy it.
i did once, not difficult to do. you can add salt and chili, make hot spicy cheese:)
you can make either creamy cheese or dried cheese. the simplest way to do is to put some milk in a pot, on slow fire. constantly stir the milk, until the water is evaporated, then put what is left in a mould, leave it dry, then you have home made cheese, probably 10 kg milk will make over 1 kg cheese
Mate … the process involves letting milk go off !!. Actually I might have a couple of old half drunk cartons stuck away in the back of the fridge if you want 
Yuk! but anyhows - i love the ginger stuff from farmers markets.
You might start by making paneer. Very easy to make a passable impression of it by heating up some milk, adding somehing acidic (I’ve used lemon juice before), letting it cool and straining through a clean cloth. So easy, we’ve made it when camping, to go with some campfire kebabs.
I left a few half glasses of undrunk milk in my bedroom when I was a teenager that turned into cheese…
dont wash for a few weeks and i’m sure you’ll find cheese quite easily in a few places…
