I want to take a week off work and go on a bike trip for a week at the end of Jan/ beginning of Feb. But where to go and not be frozen/ soaked?
Ideally ride from home, heading south…but only one week.

I’m booked skiing in January - so it is guaranteed to be warm, sunny and no precipitation in the Alps.
Australia, for the weather. Won’t for the rest of your requirements though.
Honestly, it could be raining anywhere. I’d say wing it. Put a dot in the map the night before you leave, based on the local forecast
Ive been around the uk on this basis before. each night plan the next day based on the weather forcast. it was great
Today we demonstrated our lack of off road skill, that GS 850’s on road biased (Anakee’s, I think) tyres are way too heavy for almost any off roading, and lived to tell the tale.
West coast of Baja, south of Ensenada.
GS’s are heavy to pick up, Rick’s GS must have gone down 15 times, each time harder to pick up, drag to face the right way or pull out of a ditch.

Soft sand will put most bikes into sleep mode, you needed more speed
that’s cheating! you had a support vehicle with you, albeit an impressive one
They were going the opposite way, but we were very glad to see them. We scrounged some water from them - their cooler was mostly booze.
We were having an epic, those bikes are so heavy and we’d dragged them out of ditches and picked them up many times. The guys in the buggy chatted for a bit, told us much worse was to come and left. Turned out that the rest of our route was challenging but much easier as it was flatter and wider.
Tarmac is such a great invention!
