I’ve just got back from a trip to South Wales with three friends and we stayed at the Mayhill Hotel in Monmouth: http://mayhillhotel.com. It deserves a mention due to the friendly welcome we got.
This pub has a few rooms (5 or 6 I think), nice and clean. We had an ensuite and big LCD TV in ours.
Breakfast is self service and there is enough to fill up for a long day’s riding.
Stuart, the owner, even moved his car out of the way so our four bikes could go inside his marquee/gazebo 
It’s smack bang on a good biking road, and with it being in the east of Wales pretty close to London. Once there, you can get into the Brecon Beacons and other parts of Wales.
Great value, friendly accomodation and we will visit again.
