I know the question might sound a bit stupid to ask, but I have to ask it anyway.
From 1 to 10, how unsafe is to leave the bike overnight on a west end motorcycle bay, with a disc lock and alarmed (even if I had the chain I have nothing to chain it against)? Have you guys ever had to do it?
I’m asking this because something came up for this evening and I might not have the time to go back home, chain it, cover it etc…
The bike is nothing exceptional, just an average commuter motorcycle.

I’d say 2, very unsafe. find a council car park nearby and move it to that.
Depends where exactly. Where I park, there’s bikes left overnight quite often.
After watching someone walk away with my bike in broad daylight with the same security measures I’m going with 1.
Chinatown Q Park is open 24/7 and free for bikes.
I’d personally not leave my bike unattended over night in the city, I would go with Jarrod and find an underground Carpark with 24hr security or at the very least security cameras. Most are free for Bikes so a much better option, Park it next to the nicest/shiniest bike in there so yours doesn’t look as appealing 
But…
If they want it bad enough, none of these measures will stop them unfortunately. It will just deter them slightly.

Where I work two guys were chased away trying to steal parts off bikes - this was broad daylight, where people are around constantly, theres 24hr security patrolling the area and working CCTV…

I park in Chinatown Q park many times, and no problems. Even leaving the helmet on the bike.
