How do luggage racks work, then?

I’ve seen people advertising racks and I’ve seen people advertising fitting kits. I presume then that if I were to buy a rack, it wouldn’t just bolt straight on to my bike without the appropriate fitting kit?

I’m thinking along the lines of the Givi Wingrack as I want top box and panniers capability.

When you buy the rack…you buy the corresponding fitting kit for your bike.
