Buy yourself some OS maps, byways are marked like this ++++++++ there are loads!

Unfortunatly this is no longer as easy as picking up an OS map. So many byways have been shut and declassified you could find yourself without a bike.
Down near Maidstone we now have a few that are permit only and a lot have had TRO’s placed on them.
Look at sites like the Green Lane Association http://www.glass-uk.org, Trailwise http://www.trailwise.org.uk/ and Tread Lightly http://www.treadlightly-uk.org/
Check to see if your local authority will give you a copy of the definitive map, in Kent we are lucky as they have an online version http://extranet7.kent.gov.uk/explorekentgis/map.aspx and if you click on a lane it will give you a status.
